Healthy Halloween Snacks


Halloween is the day to overload on candy, but there are some healthy (and tasty) snacks you can mix in for the kiddos! Our favorite Registered Dietician, Jennifer Meachum, has some perfect and easy ideas!

RECIPES:

HALLOWEEN BOO BOARD

What you will need:

Any size cutting board, platter, or baking sheet depending on your crowd size

For the perfect Halloween Boo Board choose a variety of fun Halloween themed snacks from different food groups/categoris based on some ideas and recipes below. Feel free to add some of your own favorite Halloween treats to the board. The only rule is to completely fill the board and have fun!

-Fruits:

Cutie Pumpkins*

Boo-nanas*

Vampire Apple Bites*

Moon drop grapes (seasonal), blueberries, green grapes, black berries


-Vegetables:

Pepper Jack-O-Lantern & Witch fingers*

Sugar snap peas, celery sticks, whole radishes, grape tomatoes


-Whole Grains:

Spider PB & J sandwiches*

Harvest Halloween Mix*


-Healthy Fats:

Guacamole Spider Web Dip

Roasted pumpkin seeds

Pistachios in the shell

Stuffed or black olives


-Protein:

Spicy Deviled Eggs*

Turkey pepperoni

Cubed cheeses

Beef jerky


-Extra sweet or salty fillers:

Favorite Halloween candy

Rice Krispie Treats

Oatmeal Raisin Cookies

Halloween shaped Veggie Chips or pretzels

Whole grain goldfish crackers



Cutie Pumpkins

"Cutie" Mandarin oranges (amount depends on number of people you are serving)

Green Apple sour punch straw bites (may sub celery or green bell pepper)

Directions:

Peel mandarin oranges, leaving whole and set aside.

Cut sour punch bites in half and insert a half into the top of each orange to create the stem.

Boo-nanas

4 Bananas (cut in half)

chocolate chips

Directions:

Cut banana in half so that each half can stand up on its own.

Insert pointed side of chocolate chip to form the eyes and mouth on each Boo-nana.

Serve immediately to prevent browning.



Vampire Apple Bites

Large red or green apple, sliced in wedges

Peanut butter, almond butter, or sunflower butter

Mini marshmallows

Slivered almonds

Directions:

To create one vampire apple bite start with 2 apple wedges.

Spread one side of each apple wedge with nut butter of choice.

Place the wedges together, placing the mini marshmallows in between the 2 wedges for the "teeth".

Insert 2 slivered almonds for the vampire ''fangs".

Repeat with remaining ingredients to create the right amount of vampire apple bites for the number of people you are serving.



Spider PB&J Sandwiches

8 slices 100% whole wheat bread

Peanut butter, almond butter, or sunflower butter

Jelly of choice

pretzel sticks

edible eyeball (may sub chocolate chips, raisins, or dried cranberries)

circle cookie cutter

Directions:

Prepare 4 peanut butter and jelly sandwiches.

Using the circle cookie cutter, cut each sandwich into circles to make the spider "body". If you do not have a cookie cutter you may use large rimmed glass or bowl.

Insert 4 pretzel sticks in the sandwich on opposite sides of the body to create the spider "legs".

Add the spider "eyes" on top edge of the spider "body". Repeat for each of the remaining sandwiches.



Harvest Halloween Mix

4 cups Popped popcorn

1/4 cup candy corn

1/2 cup lightly salted peanuts

1/4 cup dried cranberries

Directions:

Mix all above ingredients together in medium bowl and store in sealed container until ready to serve.



Pepper Jack-O-Lantern and Witch fingers*

1 yellow or red bell pepper with top removed and deseeded

8 long carrot sticks (finger length)

blanched almonds

cream cheese

Directions:

Carve a Jack 'O Lantern face into the pepper. Set aside.

Cut the tip of each carrot diagonally to create the finger "tip".

Spread a layer of cream cheese on the finger "tip".

Place the blanched almond slice on top of the cream cheese to create the finger "nail".

Repeat with remaining carrots. Display witch fingers in the Pepper Jack O Lantern.

Serve with dip of your choice such as hummus or ranch dressing.



Guacamole Spider Web Dip

2 large avocadoes, peeled and deseeded

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp salt

1 Tbsp lime juice

1/4 cup light sour cream or plain Greek yogurt

sandwich bag

toothpick

Directions:

Smash avocadoes in medium bowl with fork until smooth.

Stir in spices and lime juice.

Place guacamole in small round bowl smoothing the top of the guacamole to create e flat surface for the spider "web".

Spoon sour cream into a sandwich bag. Snip the corner of the sandwich bag with a pair of scissors to create a small hole for piping.

Squeeze the sour cream into a spiral design on top of the guacamole.

Using a toothpick drag the toothpick starting from the center of the spiral to the outside creating a "web" effect. Repeat around the entire circle. Refrigerate until ready to serve.

Serve with blue tortilla chips.



Spicy Deviled Eggs

6 Hardboiled large eggs, peeled

3 Tbsp light mayo

1 tsp. chipotle peppers in adobo sauce (sauce only not the peppers)

1/4 tsp black pepper

1/4 tsp ground chipotle pepper

Plastic spiders and bugs for decoration or for edible option create black olive spiders

1. Slice the hardboiled eggs in half lengthwise. Carefully scoop out the yolks and place in a medium bowl. Set aside the egg white halves on a platter.

2. Add mayo, adobo sauce, pepper, and chipotle pepper to the bowl. Smash with fork and stir until smooth.

3. Fill each hardboiled egg half with the deviled egg filling.

4. Add a dash of chipotle pepper to the top of each deviled egg and a plastic spider or bug.
