Jennfier Meachum was here to Show us Some Great and Fast Fall Soups


We're making healthy eating possible even with those busy fall schedules in full swing. Registered dietitian Jennifer Meachum with Physicians Premier ER was here to show us how to make two easy soups that'll last.

A creamy tortellini soup. Sauté some butter, carrots, onions, and garlic. Then add a small amount of flour to start creating a roue, once it's fully dissolved add some chicken stock. Then just dump in your ingredients. Kale, tortellini, Italian sausage, salt, Italian seasoning, pepper, and some low-fat milk! Once it's warm it's ready to eat and makes a great leftover.

Then she showed us turkey minestrone soup. Heat up some olive oil, zucchini, garlic, and onion. Then add some diced tomato, kidney beans, green beans, parsley, carrots, and ground turkey. Then add some seasoning and broth, and boil for 20 minutes before adding pasta and fresh spinach.

These are great soups to give you veggies and protein all in one delicious meal.
