Chef Brian West was here for West Wednesday! As summer is coming to a close, he's showing us how to make a potato salad that's good for summer and autumn!
The type of potato you use is super important! Chef West loves to use peewee potatoes; they're high waxy potatoes and don't overcook or fall apart within your potato salad.
While they're still a little bit warm make sure to use your acidic base on them, Chef West uses apple cider vinegar. This will give them a little extra pop within the creamy base. Put in some celery, cornichons, fresh garlic, parsley, and tarragon. The tarragon will help slowly guide the eater into autumn. His cream base is just mayonnaise and Deijon mustard!
This simple potato salad is easy to put together and delicious!
