How to make street corn jalapeno poppers


It's time for another West Wednesday with Chef Brian West. Football season is officially here so why not snack like it!

Chef West shows us how to make a street corn jalapeño popper!

Start with your corn, remove the corn silk, but keep the leaves on in order to steam the corn in the oven or over the grill. Cut the corn off the cob and then combine it with cream cheese and tajin.

Then start with a nice thick piece of bacon, then hammer it down to thin it out, or buy it thin.

Cut a jalapeno down the middle and take out the 'ribs' to get a less spicy pepper.

Once everything is prepped put the corn mixture inside and wrap it with bacon and skewer it, then place it in the oven until it's crispy and cooked through for about 10 minutes.
