RECIPES: Shrimp Salad & Strawberry Basil Spritzer


Mother’s Day Brunch with Di-Anna! Mother’s Day is this Sunday and if you want to stay in and spoil mom instead of fighting the crowds, Dianna Arias with Don Strange Catering shows us how to make a very special Mother’s Day Brunch.


Shrimp Salad

  • 1 pound shrimp, cooked and cooled
  • 1 cup chopped celery
  • 1 1/2 tablespoon fresh dill
  • 1 lemon
  • 1/2 red onion
  • 1 teaspoon Dijon mustard
  • 2 tsp lemon juice
  • 1/2 cup – 3/4 cup mayonnaise (Duke’s)
  • White pepper and salt to taste
  • Dash of Tabasco

Strawberry Basil Spritzer

  • 1 oz strawberry syrup*
  • 2 oz sparkling water (can be strawberry)
  • Minced fresh basil leaf
  • Fresh Strawberry for garnish

Optional: Add sparkling wine and a strawberry popsicle to garnish

*Syrup: Blend fresh strawberries (1 pound) in a blender and strain the liquid through a sieve, pushing the juice through them with a spatula. Pour the juice in a measuring cup and add liquid to reach 1 cup. Pour into a small saucepan and add the sugar (1 cup), lemon juice (1/2 lemon) and 1/2 cup basil leaves. Cook over low heat for 5 minutes, remove and let it cool. Strain again.
