Cowboy steak and all the fixins


Since the San Antonio Stock Show & Rodeo is still going on, Chef Brian West is in today for a rodeo edition of West Wednesday. Today he's cooking up these cowboy favorites- Cowboy Steak, Fried Brussels and Mashers.

COWBOY STEAK

-Pork and Chicken Rub
-1/2 cup dark brown sugar
-1/8 cup ancho powder
-1/8 cup chipotle powder
-1/8 cup mexican oregano
-1/8 cup cumin powder, toasted
-1/8 cup gound black pepper
-1/16 cup onion powder
-1/16 cup garlic powder
-1 each NY Strip
-1 sprig rosemary
-1 ounce butter
-salt and pepper, to coat baking dish

Directions:
-Combine and cover (this will be more than you need)
-Dry Beef saeson with salt and pepper
-Apply dry rub
-In a hot cast iron skillet add oil and butter and
-place seasoned strip on butter
-add rosemary to the pan to fry in butter
-Allow the steak to cook for 2mins then turn over and bast with hot butter
-After 2mins remove and allow to rest for 2mins

FRIED BRUSSELS SPROUTS

-2 pounds brussels sprout, cut in half
-2 fluid ounces oil
-3 fluid ounces cooked bacon , diced
-1 fluid ounce molasses

Directions:
-get oil to smoking point
-Toss brussles sprouts and fry in hot oil until crispy
-Remove and toss with Bacon Molasses and bacon


MASHED POTATOES

-4 pounds Red Skin Potatoes
-5 fluid ounces Unsalted butter, room temperature
-5 fluid ounces Milk, hot
-5 fluid ounces cream
-2 fluid ounces cream cheese
-1 1/2 teaspoons Salt
-3/4 teaspoon Black pepper, freshly ground

Directions:
-Cook the potatoes by boiling or steaming until
-tender enough to mash easily, about 15 to 17 minutes.
-Drain and dry them over low heat or on a sheet pan in a 300F oven until no more steam rises from them, about 5 minutes.
-When the potatoes are still hot, crush potatoes into a heated bowl.
-Add the butter to the potatoes until mixed
-Add the milk, salt, pepper, and combine until the potatoes are smooth and light, about 1 to 2 minutes.
