Special Family Meal in El Paso

Crab, Young Coconut, and Avocado Recipe:
Serves 2-4
1 lb. best quality or favorite style crab meat
3 tablespoons furikake (seaweed rice seasoning)
4 oz young coconut meat; small diced.
1/4 cup coconut water
1/2 cup lime juice
1 semi ripe avocado; diced
1 serrano pepper; thinly sliced
1 Tablespoon high quality honey
Cut pineapple; small chunks work best
Good quality corn tortillas

Clean and small dice coconut meat. Reserve water. Mix 1/4 cup coconut water with 1/4 cup lime juice and add cut coconut meat. Let sit for 30 min up to a day.

Cut pineapple to desired size. Mix lime juice, honey, and cut serrano in a small container with lid. Add pineapple, cover, and let sit up to 4 days in the refrigerator if you can. Maybe extra because the longer it sits the better it gets.

Mix crab, strained coconut, furikake, in a bowl and mix by hand. Feel for remaining shell fragments. Gently fold in diced avocado. Season with salt and extra lime juice to taste.

Garnish with pineapple, serranos, and thinly sliced green onions. Keep cool until ready to serve.
