Grilled Shrimp Tacos with Mango and Avocado Recipe:
In a bowl toss shrimp salt pepper blacken spice and olive oil
Place seasoned shrimp on a grill or skillet and grilled until fully cooked
Heat tortilla
Toss Cabbage with Chipotle Mayo
Load tortilla with dressed cabbage, grilled, mango salsa and avocado
Top with lime juice
To make Mango Salsa:
Combine all ingredients and set aside until needed
To make Chipotle Dressing:
Blend all ingredients and set aside until needed
Servings: 4
Yield: 4 Tacos
8 each gulf shrimp 21-25, peeled and deveined
1 tablespoon CBW Grilling Spice (or blackening spice)
4 each corn tortilla
4 fluid ounces mango salsa
4 sliced avocado
4 fluid ounces cabbage, shredded
2 fluid ounces chipotle Dressing
Mango Salsa
1 each mango, diced
3 fluid ounces red onion
1 tablespoon cilantro, minced
1 teaspoon sugar
1 each lime, juice
salt and pepper, to taste
Chipotle Dressing:
8 fluid ounces mayonnaise
1 tablespoon chipotle puree
1 teaspoon lime juice
