If you are dreading the madness of taking your sweetheart out to dinner this Valentine's Day, then we have the perfect solution for you. Chef Brian West is showing you how to make your own romantic dinner for your partner. Take a look!

Lobster Thermidor Recipe:
Cut Tails in half and scoop out the meat then dice and set aside
In a saute pan add butter and chorizo to render the fat on medium heat
Add mushroom and saute until soft de-glaze with brandy add clam juice and heavy cream reduce until thick
Add raw diced lobster, salt and pepper and cook for 2 mins
Load into empty shells, top with Cheese and
Bake for 10 minutes at 400 degrees until golden brown
Plate and finish with truffle oil

Servings: 2
Yield: 2 tails
2 each lobster tails 5 oz
1 tablespoon butter
2 cloves garlic
2 fluid ounces chorizo
4 fluid ounces mushroom, sliced
2 fluid ounces sweat brandy
2 fluid ounces clam juice
2 fluid ounces heavy cream
salt and pepper, to taste
1 fluid ounce Parmesan cheese
1 teaspoon truffle oil
