Missing out on these healthy recipes is a big 'missed steak'


When you think of summer, tons of tasty treats come to mind. From ice cream to sno-cones, cool cocktails and more, it seems summer is the time to splurge on your sustenance. If you want to kick those unhealthy habits to the curb, don't worry. We're showing you some easy and delicious recipes that will make you less hungry and more healthy!

Arugula and Watermelon Salad Recipe:
4 cups of Arugula
1 cup watermelon, cut into small chunks
1/4 cup roasted, salted pistachios (shell removed), chopped
1 Tbsp Parmesan cheese, shavings
1 Tbsp avocado oil
Lemon wedge
Black Pepper to taste

Directions:
1.In large bowl add arugula, watermelon, pistachios, and Parmesan cheese
2.Drizzle top of salad with avocado oil, a squeeze of lemon, and black pepper.

Beef Tenderloin with Chimichurri Sauce Recipe:
3 to 3 1/2 pound beef tenderloin
1 Tbsp avocado oil
1/2 tsp. black pepper
1/2 tsp garlic powder
1/2 tsp. onion powder
1/4 tsp salt

Directions:
1)Preheat oven to 425 degrees.
2)Rub all sides of beef with oil and spices.
3)Bake in preheated oven for 25 to 30 minutes or until meat thermometer registers 140 degrees (medium).
4)Remove from oven and cover loosely with foil allowing to rest for 15 minutes. Slice and top with chimichurri sauce (directions below).

Chimichurri Sauce:
1 cup fresh parsley
1 Tbsp fresh oregano
4 garlic cloves minced
1/4 tsp crushed red pepper flakes
1/4 cup red wine vinegar
1/2 tsp kosher salt
Black pepper
1/2 cup avocado oil

1)Place parsley, oregano, garlic, crushed red pepper flakes, and red wine vinegar into food processor and pulse until chopped but not pureed. If you do not have a food processor you can finely chop the parsley, oregano, and garlic and stir in the crushed red pepper flakes, and red wine vinegar.
2)Transfer into small bowl and stir in salt, pepper, and avocado oil. Store in refrigerator until ready to use.
