The Perfect Pancake Board
From the Kitchen of Jennifer Meachum RDN, LD
-Large wooden cutting board
-12 pancakes, prepared*
Protein Options:
-6 slices of turkey bacon or nitrite free bacon
-6 turkey or chicken breakfast sausage links
-3 hardboiled eggs sliced
-Small bowl creamy peanut butter or nut butter alternative
Fruit Options:
-Strawberries, sliced
-Raspberries
-Blueberries
-Blackberries
-Bananas, sliced
Topping Options:
-Nutella
-Maple Syrup
-Mini Chocolate Chips
-Homemade sugar free whipped cream**
Assembly:
-Before you get started remember that there is no right or wrong way to make this board. The perfect board is one that includes all the things that you love.
-Arrange pancakes in a snake pattern in the center of the board.
-Lay fruits down on the board between the curves next to the pancakes.
-Place toppings in small bowls and arrange between the fruits and pancakes.
-Add the proteins on opposite ends of the board. Voila!!!!

Buttermilk or the frozen version, Buttermilk Power Flapjacks.
*To prepare sugar free whipped cream you will need: 1 cup heavy whipping cream and 2 packets stevia.
Chill mixing bowl and beaters in freezer for 30 minutes. Whip cream and stevia for 2 to 3 minutes with
electric mixer until medium peaks form. Do not over beat.
