Paella Rice Recipe

Servings: 5
Preparation Time: 1 hour 25 minutes
1 4 oz chicken thighs
1 1/2 ounces Mexican chorizo
1/4 each red onion, diced med
1/4 tablespoon curry powder
1/4 tablespoon cumin
1/4 tablespoon ancho chile powder
1/2 quart water
1/2 tablespoon honey
1/2 pinch saffron threads salt, to taste
1/4 quart med grain rice
1/4 cup peas, frozen
1/4 cup carrot, diced and blanched
1/4 cup roasted red pepper, diced Shellfish Kit
1/4 4 oz fish fillet
1 1/4 each mussels, de-bearded
3/4 each shrimp
1/4 each sea scallops
1 1/4 pieces calamari
3/4 each clams Saffron Lobster Stock, prepared
Red Pepper Aioli, prepared

Season and sear chicken in the paella pan remove and set aside
Cook the chorizo in a large saucepan, heat until browned and fat is rendered out.
Add the onion,curry powder, cumin, and ancho chile powder and saute 3 min
Add water, honey saffron. Bring to a simmer add seared chicken and simmer until cooked them remove and pull apart
Tasted broth for seasoning add back it the pulled chicken then shake in Rice and stir to mix.
Allow to cook adding any garnish to cook as needed
