It's West Wednesdays and Chef Brian West is making some delicious comfort food, chicken and dumplings! It's simple and easy and you can create this tasty recipe in your home!

Chicken and Dumplings Recipe:
In bacon fat Sear Chicken to brown and set aside
In rendered fat saute Onions, Celery and carrots until sweated
Add stock water and herbs salt and pepper then add chicken back in
Simmer until chicken it tender about 45 mins
skimming off fat remove chicken and set aside until ready to serve

To make dumplings:
Place all the dry ingredients in a mixing bowl
Add in milk and mix quickly until combine
Fold in Parsley and roll out and cut into squares
To cook dumpling place in the broth and cook for
30 mins until fulling cooked, this will also thicken the broth
Once cooked stir in sherry and heavy cream re-season to taste
Add cooked chicken back on low to reheat

2 fluid ounces onion, diced
1 fluid ounce celery, diced
1 fluid ounce carrot, diced
1/2 quart chicken stock
1 quart water
1 each bay leaf
1/2 tablespoon salt
1/2 teaspoon pepper
1/2 teaspoon thyme, dried
1/2 tablespoon rosemary, minced
1/2 fluid ounce sherry, or Bourbon
1/2 tablespoon heavy cream

8 fluid ounces flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 fluid ounce butter, melted
3 fluid ounces milk
1 fluid ounce parsley, chopped
